Dismounted Norman Knights replace Dismounted Feudal Knights, though I don't know of any differences other than appearance - and the Norman Knights certainly do look much cooler than the the Feudal knights, but that's about it. The Turks have a little trouble getting good melee cavalry, so Armenian mercenaries can provide them with a weapon to match the Western Knights more easily than they could otherwise.
